The restaurant's seating capacity inside the building equals to 90 covers, and in summer it tripples up thanks to huge outdoor terrace.

I have been assisting the General Manager to run the restaurant's operations by: organizing the working process (scheduling colleagues, supplying them with all necessary tools, taking care of the bookings, cascading all relevant information, etc.), planning the restaurant's financial activity (tracking financial performance, minimizing costs, driving the upselling, etc.), staffing both service & kitchen teams (screening the candidates, conducting interviews, structuring the 'suck-in' process for each and every new employee, providing them support in the first few weeks), directing the team (through trainings, performance appraisals and leading by example), and controlling all of the relevant areas (maintaining the service standards, implementing the ISO & HACCP policies throughout operations, discovering the areas of improvement, etc.)

Had undertaken a Management Training program in Food & Beverage department at such an amazing property (the resort is on the Golden List of Conde Nast Traveller for the past couple of years, recognized as one the best resorts all over aquatoria of Indian Ocean). The program is introduced by Kerzner International - the management company for such hotel brands, as: One&Only Resorts, ATLANTIS Resorts, Mazagan Beach & Golf Resorts. The program brought me through all departments of the hotel giving me an opportunity to understand how do all of them function together and how do they relate to department of my specialization. During the program I was working closely with Director of Food & Beverage:

I have started working at the Restaurant 'The Towers' as a runner, was quickly engaged to handle section at the Front-of-House. Was moved to the Lobby Bar to work as a Bar Attendant later on, working closely with the Bar Manager. Also got the opportunity to perform Room Service duties while working the night shifts.

I have gained the understanding of how to deliver the service as per highest standards of quality, how to use the POS (Micros) and understood how is it linked with PMS (Opera). I have learned how to take payments with cash register / CC machine. While being at the Bar I was introduced to the inventory process and was explained how to manage the beverage cost.

Was lately employed as Assistant General Manager at Ossiano Underwater Bar & Restaurant at Atlantis, The Palm, for 2 consecutive years.
